Everyone knows how important it is to eat vegetables, yet most Americans are barely consuming the daily recommended amounts. Michele Nielson, Salt Lake City resident and author of the recent cookbook "Eat, Drink, and Be Green," was one of those people until she experimented and found ways to incorporate more fruits and vegetables into her daily diet. The results are more than 70 tasty recipes, including smoothies, salads, soups, entrees, sweet treats and more in her cookbook. Although the title emphasizes the color green, the full spectrum of the fruit and vegetable rainbow is represented. The recipes are mostly vegetarian with a few dishes that contain fish, eggs or dairy. Nielson provides thorough instructions and tips with each recipe about preparation, storage and substitutions. A great bonus at the end of each chapter is a list of FAQs about the recipes and general nutrition advice and tips. In addition to the book, Nielson also referenced her website, MichelesGreenSmoothies. com , as a resource for instructional videos, recipes and additional tips. "Eat, Drink, and Be Green" is highly recommended as a resource for families and individuals needing to increase their "green" consumption and love it. It's easy to read and filled with tips to help someone ease or dive into the "green" eating... I wasn’t really a fan of Pad Thai until my niece Elaine made it one night when I was visiting. This recipe is very similar to hers but uses more bean sprouts and fewer noodles. Interestingly, as long as there are some noodles in the recipe, the lightly cooked bean sprouts come across as if they were noodles. 4 ounces Pad Thai brown rice noodles. 5 green onions (white part). 5 green onions (green part). 3-4 (about 3 ounces) mini red or yellow bell peppers. 12-14 ounces mung bean sprouts. ½ bunch (1-1½ ounces) fresh cilantro. 1 fresh lime. ¼ cup-½ cup (1-2 ounces) roasted peanuts. 1 tablespoon coconut oil. 2 teaspoons minced garlic (fridge). 4 ounces Pad Thai sauce. Pan: 12-inch skillet or large wok. Place the noodles in a container of hot water to soak. They will need about 30 minutes to soak, and that should be about the amount of time you will need to prep the produce.
