This week we’re taking a break from healthy recipes to focus on one of our favorite, anti-oxidant rich ingredients: chocolate. Below, we’ve chosen an excerpt from Theo Chocolate: Recipes & Sweet Secrets from Seattle’s Favorite Chocolate Maker Featuring 75 Recipes Both Sweet & Savory by Debra Music and Joe Whinney (Sasquatch Books), which focuses on decadent treats perfect... Try making the recipes at home and let us know what you think. To make the marshmallow, use the quantities listed on the following page and follow the instructions for Marshmallows (see Marshmallows recipe below), with these exceptions: use a small (2-quart) saucepan to cook the sugar to make it easier to... Cook the sugar over low heat until it has dissolved completely. When whisking the marshmallow, it will only take about a minute at medium speed to get the mixture frothy and pale. After adding the vanilla and salt, increase the speed to high and whisk until the marshmallow is thick and very white, about 3 minutes. When the marshmallow is ready, move as quickly as you can to pour it in an even layer over the caramel (such a small amount will set up very quickly). Use a small metal offset spatula to push the marshmallow into the corners of the pan and get the top relatively smooth. As the marshmallow sits, it will level itself. Let the pan sit for between 12 and 24 hours, uncovered, to set. Dust the top of the marshmallow layer with cornstarch and then follow the instructions in Dipping Candy Bars (see “Dipping Candy Bars” below) to cut, coat, and dip the bars in the tempered chocolate. The bars will keep at room temperature for up to 3 months. Vanilla Caramels. Makes one 9-by-13-inch pan of caramels (about 96 one-inch-square pieces). ½ vanilla bean. 4¾ cups heavy cream. ¾ cup light corn syrup. 4½ cups sugar. ½ cup (1 stick) unsalted butter, cut into 8 pieces. About 3 pounds tempered Theo milk or dark chocolate for dipping (optional). Flaked sea salt (such as Jacobsen Salt Co. ’s), for decoration (optional). Cut the vanilla bean in half lengthwise. Use the back of a knife to scrape out the seeds from both halves. In a large saucepan, combine the seeds, bean, and the cream. Bring the cream to a simmer, then remove the pan from the heat, cover it, and let the vanilla steep for 20 minutes. Meanwhile, line a 9-by-13-inch pan with. Source: www.yahoo.com
Fed up of using a mish-mash of saucepans, some of which look as though they should have been thrown out years ago. Or perhaps you’ve got a new cooker, or even kitchen. Whatever the reason you want to update your saucepans, investing in a whole set will doubtless save you money and always look good. Do bear in mind the kind of hob you have when making your choice: all pans will work on electric and gas hobs, but pans for induction hobs require a certain amount of ferrous metal, such as iron, in order for the electromagnetic waves to be able... If you’re not sure whether a pan is suitable for induction, you can test it by seeing if a magnetic sticks to the bottom of the pan – if not, avoid. Raymond Blanc Hard Anodized 5-Piece Set: £124. 94, hartsofstur. Raymond Blanc may put his name to a lot of products, but this one is well deserving of his endorsement, thanks to the triple layer metal, which makes for fantastic heat distribution and is non-stick and non-scratch. If you like to minimise the amount of oil you cook with and pans you can bung in the dishwasher, it’s a winner. 4 Piece Cookware Set: £330, pamperedchef. This is the most expensive in our round-up, but the attention to detail is worth the price-tag. The chunky base and thinner upper mean you get fast yet even heat distribution and the patented materials make them both durable, non-stick and easy to clean. Plus, they’re oven-safe. Tefal 4-Piece Saucepan Set with Removable Handle: £60, homeandcook. Patented detachable handles make this set ideal for those short on storage space as it means they can nestle inside each other, whilst the glass lids with fold-flat knobs also stack easily. It also means you can use the pans in the fridge or on the table without taking up too much space and in the oven. Toughened Non-Stick 3-Piece Set: £269, lecreuset. As soon as you get these two cast aluminium saucepans and frying pans out of the box, you can see that they’re top quality. Reassuringly heavy, without being too weighty, they are also as elegant as pans can be. Best of all, they heat through incredibly fast, though, sadly, they’re not dishwasher-safe. Jennifer Vargas usually catches her husband in the act late at night. “After I’ve started the dishwasher, he’ll open it up and start rearranging everything,” says Ms. Vargas, a public-relations executive in Crestwood, N. Y. “It drives me crazy. Her husband, Levy Vargas, an operations director, says his stacking method gets better results. “Jen is more blasé, and I’m more agitated by incorrect loading,” he says. “If I don’t think it.
