Expert Column: Atlanta International Gift - Gourmet Retailer

The first major trade show of the year -- Atlanta International Gift & Home Furnishings Market – completed its week-long run January 14. By any measure, the January market was a huge success. Days before the market’s opening, AmericasMart had introduced a new mobile app for buyers attending the market. An added bonus, the campus now features free WiFi. By the end of the first day, more than 5,500 attendees had downloaded the app, exceeding the market’s projections. By close of business Tuesday, first-day actual on-site registrations exceeded all previous opening-day totals. And pre-registrations posted their highest gains in six years. Market first-day registrations included retailers and designers from all 50 states and more than 90 countries. Gourmet Catalog collocated its Start of the Year Member Meeting and trade show with Atlanta Gift. In all, about 150 vendors participated, showing off the latest additions to their lines. One of the best ideas spotted: Table Swoon. Everything needed to make a striking table -- chargers, napkins, placemats, table runners, centerpiece, accessories and more -- is included in one box. This creative idea -- and new company -- is the brain child of Natalie Engelhardt. Five table settings are available: Le Souk, Midnight Blue, Black Tie, Natural Beauty and the Asian-inspired Now and Zen. All have a SRP of $99 and are available through Gourmet Catalog. An added bonus: for each purchase the New York-based company donates four meals to children through City Harvest. Induction-Ready Cookware. There were a lot of line extensions in the lucrative cookware category. Le Creuset introduced its newest color, Palm, a bright green hue. Woll USA added new saucepans to its cookware line, including one that is induction-ready. Denby added a 7-quart enameled cast iron Dutch oven. Chantal showed its new 21/0 Japanese steel cookware line, which features a Whitford non-stick coating and is induction-compatible. Bialetti also introduced its Bialetti Aeternum ceramic non-stick induction cookware that’s made from heavy-gauge aluminum. A little pressure in the kitchen can help take pressure off the cook. Today's pressure cookers can make a hearty, healthy meal in about one-third of the time it would take in the oven or in pans on the stove. There seems to be two camps, however, when it comes to this cookware: those who use it, and those who don't. Pressure cookers cook food at higher temperatures thanks to the steam that builds up in the sealed cooker. Proponents say this saves time, energy, nutrients and flavor. 'Fraidy cats worry that all that heat and pressure are dangerous. My friend and co-worker Angelika Kane of Ingram never lost her enthusiasm for the pressure cooker, even though as a child she was baptized by vegetable soup. She recounts an early memory of her mother opening the cooker before the pressure was released, causing soup to spew to the ceiling. And yet Ang always has used pressure cookers in her kitchen. She now owns two stainless-steel Magefesa ( mah-hay-fes-sa ) models, an 8-quart and 10-quart. They are 10 years old -- they still have the "jiggle" pressure-release valves that spin during cooking -- and cost $260 to $280 each, among the more pricey pressure cookers available. She uses hers constantly and says she has never had to replace so much as a rubber seal on the lid. I grew up pressure-less, and after hearing horror stories of cookers turning into volcanoes, wasn't very tempted to try one. When Ang told of all the wonderful recipes she created -- Ribs in 18 minutes and so tender that the meat falls off the bone. Dried beans in minutes instead of days. -- my curiosity was piqued. " Her first, "Miss Vickie's Big Book of Pressure Cooker Recipes," is a great starting point for interested cooks and also my favorite, but it is certainly not the only book out there. Here are a few others:. • "Cooking Under Pressure," (Morrow, 2009, $23. 99) and "Pressure Perfect" (Morrow, 2004, $24. 99) both by Lorna Sass. These have lots of recipes as well as detailed instructions on how to cook veggies, rice, lentils and meats, as well as soups and desserts. • "The Everything Pressure Cooker Cookbook" by Pamela Rice Hahn. Mary Moore, founder and owner of The Cook’s Warehouse in Atlanta, enjoyed the small classroom sizes. “Friday’s training sessions were excellent.
