50 common mistakes Indians make while cooking healthy food - TheHealthSite

Here is what you should and should not do when you switch to cooking healthy. Don’t switch to olive oil or any so-called healthy oil without checking whether it is meant for high-heat Indian food like dosas or sabjis. Don’t use extra virgin olive oil for deep frying. Check the smoke point of oils before deep frying for that occasional binge. It must be healthy ‘coz it is made at home after all’ is not true when oil turns rancid. Don’t just toss different vegetables of any shape and size in a pan and sauté because it looks good in a recipe book. Chop vegetables evenly or else they take longer to cook and lose nutrition in the process. Also, add vegetables to the pan according to the time each will take to cook and not all at one go. Don’t use non-stick cookware that is chipped (black coating peeling off) or if it emits a weird smell when it is hot. Don’t use non-stick cookware with Teflon® for high-heat cooking despite what the ads claim, because the fumes are supposed to be bad. Don’t just microwave food and serve it immediately – check whether the food is evenly cooked. Don’t make juices, shakes and smoothies and refrigerate them. Fruits are meant to be eaten fresh and not cut and stored. Don’t skip the bread or other carbs when you make eggs for breakfast, carbs are needed to absorb the protein from eggs. Don’t switch to sugar substitutes for all desserts. There is plenty of research that shows how some sugar substitutes can actually be bad for you. Also, sugar-free does not mean low calorie. Don’t buy that range of plastic containers to store food. It is more hygienic to use steel. Don’t use plastic utensils. Use good quality wooden chopping boards and spatulas instead of plastic because wood is easier to clean and does not promote the growth of bacteria. Don’t be quick to replace traditional cooking methods with grills and barbecues because smoked and char grilled food may cause cancer. If you must use them, make sure these are properly cleaned. Don’t shallow fry food if you need it to cook quickly. Deep frying is better in such cases. Use oils with a high smoking point. Don’t simply substitute sugar with honey or jaggery. While jaggery and honey are healthier options compared to sugar – brown or white, you need not cut-out sugar completely from your diet. Know how much. Source: www.thehealthsite.com

KODIAK ISLAND -- I’m staring at a mountain. It’s early morning in late November 2014, and my mug of coffee billows in the shallow light. The snow of yesterday, which tops the spired peaks beyond, melted overnight. What remains is open ground -- a canopy of rock and lichen, bent grasses and wind. I’m at sea level. The water in the bay is calm. Today we climb. My body is willing to let me down. It’s day three and despite a break in the weather, what little resolve I can muster is quickly hushed by the muscles that cramped through the night, waking me like the cries of incessant infants, never quiet, never soothed. “That’s beautiful,” I think to myself, visually wandering through the contours of the mountain beyond. I fail in my attempt to articulate further some sort of fresh way to advance beauty in words without collapsing on the broken cliché of men admiring mountains. I swill down what remains in my tarnished mug and leave poetics for another day. I’m here to hunt. To sit quietly and observe. To shoot and to kill. To take the life of some unknowing creature. Along with me is my good friend Casey Dschaak, who I trust can handle himself and me as we share the experience in remote Alaska, far from television, Wal-Mart, cell phones, computers and whatever else sedates an otherwise wild psyche.
